Introduction to minimally processed foods

 

The term "minimally processed foods" is not legally defined.
On this website we mean by it such foods as are not suitable at all for human consumption until they are processed. Products that are made edible or are created by means of a few steps such as fermentation, leavening, or heating also fall into this category. What is important is that the naturalness and authenticity of the raw material are preferably unchanged by the technological steps taken.
A direct comparison with the unprocessed primary products, of course, shows that their processing always slightly alters the components. This is indicated in each individual chapter.
